Strawberry Raisin Pudding

INGREDIENTS

2 Bimbo Panque con Pasas (Raisin Pound Cake)
1/2 cup brown sugar
5 eggs
3/4 cups milk
1 teaspoon ground cinnamon
1 pinch of salt
2 tablespoons vanilla
1 tablespoon butter or margarine
1 cup strawberry syrup
Raisins and chopped strawberries to taste

PREPARATION

1. In a bowl, lightly mix (with a balloon whisk) the eggs, milk, sugar, cinnamon, salt and vanilla until well blended. Next, add the crumbled Bimbo Panque con Pasas.
2. Mix carefully until a light paste is formed.
3. Pour the mixture in a cake pan previously greased with butter.
4. Cook on a double boiler (bain-marie) and bake at 350°F for 35 minutes, or until a toothpick comes out clean.
5. Let cool and remove from pan.
6. Serve each portion drizzled with strawberry syrup, and top with raisins and chopped fruit to taste.

TIP: Add 1/2 cup chocolate chips for richer flavor.
