Roll Toasts with Cranberries

1 1/2 packages Bimbo Roles de Canela (Cinnamon Rolls)
1/2 cup cranberries
1 cup cranberry juice
1/2 cup sugar
3 anise seeds
2 tablespoons cornstarch
2 cups whipping cream


1. Boil the cranberries in the juice with the sugar and anise seeds until the volume has reduced to half.
2. Hydrate the cornstarch in 1/2 cup cold water, mix well and incorporate into the cranberry mixture. Stir over low heat until thickened.
3. Slice the Bimbo Roles de Canela in half and place each bottom and top under a layer of clean plastic to flatten with a rolling pin.
4. Toast the flattened rolls.
5. Pour whipped cream on all roll bottoms and then add the drained cranberries.
6. Put each base on top of another to form towers and cover with the roll tops you set aside.
7. Garnish with the remaining cranberry juice and fruit.

TIP: Add chopped pecan nuts over the cranberries on the bottoms. Replace cranberries with chopped peaches.
