Pecan, Cranberry and Cheese Muffins

1 Bimbo Panque con Nuez (Pecan Pound Cake)
2 eggs
1/2 cup warm milk
1/3 cup sugar
1 tablespoon baking powder
1/2 cup cranberries
100 g (3.5 oz) cream cheese (room temperature)
1 teaspoon vanilla


1. Grease a muffin pan lightly with butter, or place a muffin cup inside each individual muffin pan.
2. Mix eggs, sugar, vanilla, milk and baking powder until well blended.
3. Add the crumbled Bimbo Panque con Nuez to the mixture until forming a soft paste.
4. Preheat oven to 350°F.
5. Cover the candy cups or greased individual pans with the mixture.
6. Slowly, add the cranberries as you add a little bit more mixture. When a third of the cupcake pan is full, place a portion of the cream cheese in the center and cover with additional mixture without completely filling it.
7. Bake for 25 minutes or until a toothpick comes out clean.
8. Let cool, and sprinkle with confectioner's sugar (optional).
9. Garnish with red fruits and mint leaves.

TIP: Replace cranberries with dry fruit.
