Muffin Baskets

Servings: 4-6

INGREDIENTS

2 packages Bimbo Mini Mantecadas (Mini Muffins)
3 tablespoons honey
2 tablespoons butter or margarine
1 egg
Aluminum foil (as needed)
1 tablespoon softened margarine to grease cake pan
Flour (as needed)

FILLING:
1 liter (1 qt) vanilla ice cream
1 1/2 cups red berries (raspberries, berries, strawberries)

PREPARATION

1. Lightly grease pound cake pan or individual muffin pans.
2. In a bowl, place the crumbled Bimbo Mini Mantecadas. Add the rest of the ingredients and mix with a fork to form a soft paste.
3. Preheat oven to 350°F
4. Line the base and sides of each muffin pan; alternatively, shape the paste to form baskets (you can shape them with the help of a fork).
5. Use the aluminum foil to form small balls that fit inside the baskets and put them inside each basket, making sure they fit well.
6. Bake at 350°F for 15 minutes.
7. Let cool and fill with a ball of ice cream; serve garnished with red fruits.

TIP: Serve with a different ice cream flavor and garnish with canned peach slices in heavy syrup.
