Cinnamon Ice Cream Cup

INGREDIENTS

1 Package Bimbo Roles de Canela (Cinnamon Rolls)
1 liter (1 qt) coffee ice cream

SAUCE:
2 tablespoons instant coffee or 1 cup strong espresso coffee
2 cinnamon sticks
3 tablespoons cornstarch
1 cup whipping cream
Sugar to taste
Chocolate-covered coffee beans (optional)
Ice cream cups (optional)

PREPARATION

1. Add the cinnamon to a quart of boiling water and let boil so that it becomes a concentrated infusion.
2. Dilute cornstarch in 1/3 cup cold water and add to the infusion with two tablespoons of coffee. Stir until thickened, sweeten to taste and remove from fire.
3. Once the sauce is cold, add the cream (unwhipped) and mix well. Refrigerate.
4. Crumble the Bimbo Roles de Canela.
5. Put a base of crumbled Bimbo Roles de Canela in the cups and cover with the sauce. Next, add another layer of Roles, followed by another layer of sauce.
6. Finally, top with an ice cream ball and garnish with coffee beans and chocolate.

TIP: For a more elegant dessert, serve with 4 tablespoons of coffee liquor.
